Mushroom Gruyere Baked Eggs | Always Late to Trends

Ever since I can remember, I’ve been somewhat ignorant and/or terribly late when it comes to trends.

I’m not trying to make any kind of statement or even consciously make these choices; I simply either don’t even realize the trend is happening until it’s nearly over (gaucho pants, anyone?) or I decide it’s just not for me (skinny jeans took me years to even try on; jeggings, well, I’m worried that if I even try on a pair I may not be able to get them off).


This happens often with T.V. shows as well.  My husband and I don’t have a T.V., so there’s no channel-surfing or an overwhelming amount of commercials advertising “the newest hit.”  We deliberately choose shows to watch online, usually at the recommendation of a friend.

For the past couple years, I’ve had several friends tell me I would like Downton Abbey.  About a year ago, I gave the very first episode a try.  I usually have a hard time taking naps, but about midway through the episode, I found myself drifting-off only to awake just as the episode credits were scrolling.  I decided if it could put me to sleep then it just wasn’t worth my time.

Well, the other day I found myself inside during another snow day.  I decided to give Downton Abbey another try and watched  Episode 2 of Season 1.  I’m not sure what happened this time, but I was immediately hooked.  I have since watched the entire first season and am thrilled that there are more episodes waiting!


I’m not sure if baked eggs were always a thing, and I just never caught-on (very possible).  But when I saw several food magazines all featuring baked egg recipes around the same time (December 2012 😉 ), I decided it was a trend worth {finally} trying.

I’m so glad I did.  This is truly a One-Pot-Wonder. It’s perfect for breakfast, brunch or breakfast-for-dinner.  It’s got eggs, cheese, veggies and bread, and can easily be adjusted for 2 or 12 people.

Mushroom Gruyere Baked Eggs

Ingredients (Serves 2-3)

  • 1 tbs. olive oil, plus more for brushing
  • 1 onion, chopped
  • 5 oz. white mushrooms, sliced
  • Salt and pepper, to taste
  • Oregano, to taste
  • 2 cups baby spinach
  • 3 slices sourdough bread, lightly toasted (or other bread of your choice)
  • 3 large eggs (though the photo only appears there are 2 eggs, the 3rd got separated and hidden amongst the veggies)
  • 1/2 cup milk
  • 1/2 cup shredded Gruyere cheese
  • Red pepper flakes, pinch


1. Preheat oven to 350 degrees. Heat olive oil in a large skillet over medium-high heat. Add the onion and cook 4-5 minutes, until lightly browned. Add the mushrooms and cook 4-5 additional minutes. Season with salt, pepper and oregano. Add spinach and cook until wilted, about 2 minutes. Remove from heat.

2. Lightly brush oven-safe skillet or baking dish with olive oil or spray with cooking spray. Lay lightly toasted bread in single layer on bottom of skillet/baking dish (it’s okay to cut pieces so that they fit together). Evenly spread cooked mushroom mixture over bread.

3. Crack an egg onto each piece of bread. Sprinkle with salt, pepper and red pepper flakes. Sprinkle with cheese. Bake until the egg whites are set, about 25 minutes. Serve immediately and enjoy!

    I love baked eggs – especially with cheese! I usually do it with eggs and vegetables, and then use bread to dip…but I love the idea of adding the bread right into the dish.

    Sometimes I´m inmerse in trends because as you may know by now…my daughter is into this crazy fashion world..but me myself doesn´t follow fashion much, But I must confess, lately I´m quite a series freak, LOL….I´ve seen Breaking bad, Homeland and now the good wife which I love. Downton Abbey was one of my favourites, I´ve lived in England for years and then my daughter went to College in London so I love the culture and the settings. The dresses there are wonderful.

    YES to baked eggs! I rarely make them because the.boy hates runny yolks…but I’m slightly obsessed with them. And ALSO yay to Downton love!!

    Yep, I’m with you on the ‘late to trends’ boat (and the Downton Abbey kick), Nami. Although… I think baked eggs are a timeless classic – like pearls or the LBD. I love that you’ve made it into a complete and filling meal.

    This looks deeeelicious!
    I have made huevos rancheros once before, and recently a tomato and pesto rice fried egg dish, and it is amazing how much of a difference preparing it in a pan for an extra few minutes can do 😀 I don’t have a TV either, some of my friends find it weird, but I am used to it – less of a distraction if anything!

    I used to always eat baked eggs, then sort of forgot about them. I like ’em!! There is a new fashion trend that I saw in a couple magazines recently … creeper shoes. They are hideous!! They have a big, thick foam sole so they don’t make a sound when you walk. They are so, so ugly, and I will not wear them!!
