Salted Caramel Brownies

by simplylife on January 22, 2014

During high school, I spent nearly every Saturday morning babysitting.

I always looked forward to this time, and one of our favorite activities to do together was bake brownies.

I mean really, who can resist a Saturday morning spent licking chocolate batter and biting into warm, fresh-baked brownies?

In my head, the options for brownies were whatever boxed mixes were available at the store.  I just picked-out whatever sounded good and was on sale.  The thought of making brownies from scratch never even crossed my mind.

While boxed mixes can be quite tasty, I am grateful that since this time, I have realized how the options are truly endless when you step outside the pre-packaged section of the grocery store and start experimenting with your own flour, sugar and eggs.

These decadent brownies with a gooey salted caramel topping will forever change how you prepare brownies.  All the ingredients are familiar, making this just as easy as following the directions on the back of the box, yet they come together to form the absolute perfect dessert.

Ingredients (9 brownies)

    • Nonstick cooking spray
    • 1 cup sugar
    • ¾ cups baking cocoa
    • ½ tsp. kosher salt
    • ½ cup (1 stick) unsalted butter
    • 1 tsp. vanilla extract
    • 2 large eggs
    • 1/3 cup all-purpose flour

    Salted Caramel Glaze

    • ¼ cup sugar
    • 2 tbs. unsalted butter
    • 1/8 tsp. ground sea salt
    • 2 tbs. heavy cream

Preheat oven to 325 degrees Fahrenheit. Spray inside of 8×8 inch glass baking dish with cooking spray. Set aside.

Mix together 1 cup sugar, baking cocoa and salt in medium bowl. Melt butter in small saucepan over low to medium heat.

Allow butter to cool slightly then slowly pour into dry ingredients. Whisk together until evenly blended. Slowly whisk in vanilla then eggs, one at a time. Stir in all-purpose flour just until evenly blended and smooth.

Pour batter into prepared baking dish and smooth the top using a spatula. Bake until toothpick inserted into the middle comes out clean, about 30-35 minutes. Let cool completely.

Prepare the glaze. Place ¼ cup sugar in small saucepan over medium-high heat. Stirring frequently, heat sugar until it liquefies, about 3 minutes. Stir constantly additional 1 to 2 minutes, until sugar turns light brown. Immediately remove from heat. Add sea salt and butter. Stir constantly until butter is melted. Return pan to stove over medium heat and add heavy cream, stirring until completely incorporated, about 1 to 2 minutes. Allow glaze to rest for 30 seconds to 1 minute.

Using a teaspoon, drizzle caramel glaze over brownies. Allow brownies to cool completely then cut into 9 pieces.

Oh boy, DID I use boxed mixes growing up – I was always tapped to make brownies for bake sales etc., and it was basically a boxed mix with nuts stirred in. BONJOUR CHEF.

      Obviously this looks way better.

I babysat a lot too 🙂 Also, your pictures in this post are FANTASTIC!! And, I occasionally buy boxed mixes … but mostly just when it’s my turn to bring treats to work and I don’t feel like doing any work.

After becoming a regular homemade-brownie-baker, I just can’t go back to the box! It definitely doesn’t taste as good anymore. These look fairly perfect.

These look awesome – I love salted caramel, especially with chocolate! I used to buy boxed mixes, but now I never do – I love making them homemade!
