This dish is so utterly simple that you can definitely make it, even on your longest workday of the week when you just want to come home, sit on the couch, and have dinner magically appear. I promise, you can put together this entire meal in less time than it would take you to open the refrigerator, pantry and freezer and declare “there’s nothing to eat.”
The Lemon Pepper Pappardelle (found at Trader Joe’s), is such a fun and flavorful pasta that the simpler the toppings, the better, and it completely lets of the flavors of the fresh tomatoes and basil shine. It would also be excellent topped with a sprinkle of parmesan cheese.
Sometimes simple is best, wouldn’t you agree?
Lemon Pepper Pappardelle with Tomatoes and Basil

Ingredients
- 8 oz. lemon pepper pappardelle
- About 4 tbs. olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 1 cup cherry or grape tomatoes, halved
- Salt and pepper
- 1 handful fresh basil leaves
- Juice and zest from 1 lemon
- Pinch red pepper flakes
Instructions
1. Cook pasta according to package directions. Meanwhile, heat 2 tbs, olive oil in medium skillet. Saute onions for about 2 minutes, add tomatoes and cook about 2-3 minutes more. Add garlic, salt and pepper and cook 1 minute.
2. Drain pasta and toss with cooked tomatoes, basil, remaining olive oil, lemon juice and zest and red pepper flakes. Serve and enjoy!
