I feel inspired by so many things.

People who give up a comfortable lifestyle to serve others in need.  Individuals who have overcome life-changing challenges..  People making the most out of every.single.day.  Programs that work hard to fight for food justice and ensuring everyone has access to healthy, local, real food.  People who work hard day in and day out to work towards a dream.

So many people, things and events continue to inspire me to live with greater purpose and meaning.

I know it sounds cheesy, but a good, healthy meal can also have the ability to inspire me.  A meal where I feel better after eating, know I am treating my body right and am using ingredients that support a sustainable future.

This meal is exactly that.  This Couscous with Roasted Vegetables and Chickpeas is packed with nutrients, uses seasonal ingredients and leaves you feeling reading to accomplish your next goal!

Couscous with Roasted Vegetables and Chickpeas

Ingredients

  • 1 cup couscous
  • 1 can chickpeas, rinsed and drained
  • 1 onion, thinly sliced
  • 2 garlic cloves, minced
  • 1/2 cup corn
  • 1 cup broccoli florets
  • 1 tomato, chopped into large pieces
  • Salt and pepper, to taste
  • 3-4 tbs. olive oil
  • Juice from 1 lemon
  • Fresh basil, to taste

Instructions

1. Preheat oven to 375 degrees. Place chickpeas, onion, garlic, corn, broccoli and tomato in a medium bowl. Toss with salt, pepper, olive oil and lemon juice. Place in oven and roast 15-20 minutes, until vegetables are slightly browned and tender.

2. Meanwhile, cook couscous according to package directions. Toss couscous with roasted vegetables and basil. Serve and enjoy!

Another thing that inspires me is people who take devastating experiences and turn them into something positive.  Teamotions was started by two sisters after one of them unfortunately lost her twin daughters just days after they were born.  A cup of tea provided her with comfort, and she and her sister knew it could do the same for others especially if they could blend it with adaptogens. I was recently sent samples courtesy of Teamotions Tea in their following flavors: Have Hope, Enjoy Rest, Find Strength, Discover Joy, Seek Peace and Achieve Clarity.  I absolutely loves the names given to each tea and feel like just choosing to drink “Achieve Clarity” or “Seek Peace” actually makes you feel that you are moving towards those descriptions as you prepare and sip each cup.

I first tried Teamotions Tea last year.  At the time, I was most impressed with the fresh flavors and obvious distinctions between each type.  I can honestly say I’ve been drinking their teas since my first sip in 2011 (the 3 oz. loose leaf containers last a long time!), and I am still utterly impressed with the quality and taste of each brew.

In addition to their six tea flavors, they also offer gift sets, tea pots and a tea scoop.  As previously mentioned, I have now been drinking this brand of tea for over a year and would highly recommend Teamotions to any tea lovers!
