This post was written last week:
It’s 6:30am. I’ve been up for an hour. I’m sitting just outside our “villa” on a minimalist white sofa surrounded by sheer curtains swaying in the light breeze. I have a fresh cup of coffee to my right and a view of the Pacific straight ahead. The sound of birds fills the air. Yeah, a girl could get used to this.
Yesterday we celebrated our 5th anniversary. It went something like this: wake-up to a view of the ocean, walk about 50 feet to enjoy one of the best omelets I’ve ever had (green olives, feta, tomato and basil)…
…savour every bite while chatting with my wonderful husband and enjoying the morning breeze…
…and slowly sipping my strong Costa Rican coffee…
After about an hour of reading, we headed for a short walk from our resort. It led us now a narrow path through the jungle where we passed a yoga platform just before reaching a serene waterfall.
Our tranquil hike was interrupted by the sound of howler monkeys not sounding too happy. I got a little lot nervous so we headed back to the resort, where we swam in the infinity pool.
We then shared a cab with another couple we’ve befriended during our stay and made our way down the bumpy road into town. We stopped for an authentic lunch where I was forced to use my Spanish, and happily ate every bite of my flavorful rice and beans.
With full bellies, we all headed to the beach where we strolled along the shoreline for an hour, until we arrived at the “whale’s tail” where the beach is literally shaped like a whale’s tail and you can see the water coming in from both sides (this picture doesn’t show that, but does reveal how breathtaking the shoreline was).

When we began to feel raindrops, we headed back to town and enjoyed fresh fruit (I had mango!) smoothies, then headed back to the resort… where we feasted on the PERFECT anniversary meal: red wine, green olives, carrot ginger soup, sesame snapper with the most amazing caramel soy drizzle aside a wasabi cauliflower puree and snow peas, followed by a passion fruit mouse that was just bursting with flavor!
When I thought the past 5 years couldn’t get any better, our anniversary exceeded all my wildest dreams.
And that was just Day 1.
