Two Cheese Baked Veggie Pasta: Adventures in Online Shopping

The other day I did something I rarely  do: I went shopping online.

My husband and I are horrible shoppers (when it comes to anything other than food).  We both have enough energy and patience for about 5 minutes per store.  If it looks too crowded, we literally we just walk right past and won’t go in.

So when the sandals I’ve been wearing constantly every summer for the past 3 years started to break, I decided it was time for a new pair.  We tried a few stores; I didn’t find anything I liked and came home empty handed.  Where is that ONE pair of shoes that goes with EVERYTHING?!

I really didn’t want to spend another precious weekend afternoon trying on shoes, so I decided to try my hand at online shopping.  I used Zappos, as I’ve heard they have excellent customer service and more importantly, FREE SHIPPING BOTH WAYS.

Unfortunately, I liked the shoes better from the computer screen than actually on my feet, but did appreciate how easy it was to just send them right back!  I’m still shoe-less and not wanting to go to another store (but realize there are bigger problems in the world).

Want to know another thing I recently did that I rarely do?  Baked pasta!  I don’t know why I never think to prepare pasta this way but it’s so simple and makes a basic meal feel special!  Plus, you can rest get a lot done while the oven does all the hard work and then still sit down to enjoy a warm meal!

The options are endless with this meal; you can you pasta shells, add zucchini and artichoke, melt fresh asiago or mozzarella cheese, or throw in some fresh herbs from your garden.  Whatever your preferences are, this meal can be adapted!

Two Cheese Baked Veggie Pasta

Ingredients

  • 8 oz. fusilli pasta (or other small pasta of choice)
  • 12 oz. marinara sauce (homemade or store-bought)
  • 1/2 onion, diced
  • 5-6 button mushrooms, sliced or quartered
  • 1/3 cup sliced olives
  • Large handful spinach, roughly chopped
  • About 4 oz. fontina cheese, shredded
  • About 1 oz. parmesan cheese, grated
  • Salt and pepper

Instructions

1. Preheat oven to 425 degrees. Cook pasta until very al dente (2 or 3 minutes less than package instructions). Drain pasta.

2. Spray 8×8 inch oven-safe baking dish with cooking spray. Add pasta and mix with vegetables, sauce, salt, pepper and half the cheese. Top with remaining cheese and bake (uncovered) until browned, about 15 minutes. Let cool slightly, serve and enjoy!

      Yes! But I find that things always seem to look more appealing online – I like to see it in person to REALLY know if I’ll like it- I guess that’s just the risk you take!

    I loathe shopping. Shopping online is marginally better because you don’t have to deal with stores and trying things on and never finding something that works. It’s still a pain, though – you’re right that things tend to look better on the website than in real life, or they fit strangely or something.

    What vegetables did you use? I often just use bell peppers and the usual stuff I see in pastas, but I can see those green leafy veggies there. Like a salad but cooked?

    I used to like shopping but now it appeals to me less – it’s often hard and time consuming and unproductive! I have found online shopping a really good way to buy things not available near me (or buy things that are available for less) but haven’t had much luck the few times I’ve tried buying clothes. I think I really need to try them on and I suspect shoes would be the same!

    Black olives!!!!!!!! YES!!! I do a big shopping trip about once a year (it has been in NY the past 3 years), and other than that I don’t do much shopping anymore. I buy a lot of books and CDs online.

    I don’t mind shopping, but it’s not my favorite thing to do. I hate shopping online unless it’s a store I’ve shopped at in real life and I know how their clothes are actually sized–size charts mean nothing. The same with shoes. I have wide feet and have to try everything on. I did just get my favorite sandals resoled a few weeks ago. I just couldn’t imagine finding better ones. I still need to find “work appropriate” summer shoes though. Sigh.

    I browse online, but rarely buy. Fit and quality are too hard to judge by a tiny photo. I like to try on and touch things. Good thing I love shopping in store!!!

    I love all shopping! But after a couple of hours, I’m ready to call it quits. I think my husband might, MIGHT like it more than me! Shopping for shoes online can be tricky since my feet are a little wide and my arches are a little high.     I do not like shopping. I do however enjoy strolling into downtown areas in cute boutiques “just to browse” and consider purchasing things I don’t need and then most likely leave empty handed but purse stable!

    Your pasta dish looks great…I think you would enjoy making lasagna in your own variation (maybe putting slices meat in half the pan for hubby)!
