Feta, Cranberry and Pecan Salad

One of my favorite parts of having a CSA is being forced to learn about and try new foods.

Typically, I buy spinach almost every single week.  Once in a while, I might branch out to arugula, but that’s about as adventurous as I get. :)  I’ve only received the CSA share 4 times this year and I have already been absolutely amazed at how many types of “leafy greens” there are.

We’ve been receiving spinach, kale and various types of “lettuce” and “salad mixes.”  I wish I knew exactly what these were (anyone know?…it looks like romaine but with purple at the edges).  Anyways, I am obsessed with it and have never wanted to eat salads so often, just to get a taste of these fresh leafy greens (and purples)!

This salad has sweet, salty, crunchy and tender all mixed-up in every bite.  The basil adds an unexpected burst of flavor.  It is so simple, yet absolutely addicting.  I’ve already made it 3 times in the last 2 weeks.

Feta, Cranberry and Pecan Salad

Ingredients

  • 1 head romaine lettuce
  • 2 oz. crumbled feta
  • 1/4 cup dried cranberries
  • 1/3 cup chopped pecans, roughly chopped
  • Small handful fresh basil leaves (about 7 or 8), roughly chopped
  • 1 cup croutons
  • 4-5 button mushrooms, chopped
  • Balsamic vinaigrette (or other dressing of choice)

Instructions

Toss all ingredients together. Serve and enjoy!

I have been loving all the unique flavors they offer!  I have tried several of the Joebars and have been so impressed with the variety offered!  I have never seen a coffee flavored bar before and the Coffee Joebar has definitely been my FAVORITE product of theirs I’ve tried so far!  I had this bar for a morning snack and loved how it seemed to combine perfectly the two things I crave in the morning: a nutritious and flavorful snack AND coffee!  Just read the ingredients: coconut, walnuts, coconut nectar, roasted coffee, chia seeds, raw maca root powder, coconut oil, vanilla extract (all organic).  I mean, how can you go wrong here?  This bar is pure genius!

 

 

 

 

 

 

I also have been enjoying the Cocomo Caramel Corn; it’s only slightly sweet with a great crunch!  Again, I am amazed at the creativity here; they took a common snack (popcorn) and jazzed it up with coconut oil and coconut nectar to create something truly unique!

    I love the idea of getting new vegetables to try – it sounds like you have been making the most of the variety! I like baby spinach best, which isn’t very exciting, but also those frilly lettuces like you use here. I don’t know what the purple tipped ones are called either though!

    Yum! I absolutely love getting veggies I’ve never tried before. All of those salad greens prove to be a challenge some weeks. The variety of lettuces is astounding though!

      Yes! It really is! We started making juices at the end of the week with the leftover spinach- we just can’t seem to get through it all in a week!

    I also love our CSA because it introduces me to so many different veggies that I wouldn’t normally explore. On days we get our CSA box, I always make a big salad with the lettuce and other veggies. It’s my favorite meal of the week.
