Artichoke, Sun-Dried Tomato and Goat Cheese Panini

Some days, I’m all for taking my time and making things like Monterey Jack Soft Pretzels completely from scratch.

Other days, I want a good meal at home that I know can made in 15 minutes and not leave a ton of dirty dishes.

Enter: the panini grill.  I’m pretty sure it’s scientifically proven that warming ingredients and adding grill marks can make even a simple sandwich feel like a special meal.

Plus, when you add things like artichokes, sun-dried tomatoes and goat cheese, it feels all grown-up and gourmet.   And no one even thinks it only took about 10 minutes to prepare.

So next time you’re looking for another enticing combo to place between two slices of warm bread, look no further.

 

Artichoke, Sun-Dried Tomato and Goat Cheese Panini

Ingredients (2 sandwiches)

  • 1-2 tbs. olive oil
  • 4 slices sourdough bread
  • Generous sprinkle goat cheese
  • Generous sprinkle parmesan cheese
  • Sun-dried tomatoes
  • 4 artichoke hearts
  • Handful spinach
  • 2-3 button mushrooms, sliced

Instructions

1. Brush outside of bread slices with olive oil. Layer each sandwich evenly with ingredients. Place in panini (or other) grill and cook about 3 minutes per side. Serve warm and enjoy!

    I love paninis. I only have a “fake” sandwich maker (it was really cheap and is meant to make only grilled cheese I think). But I have been using it to make all sorts of grilled sandwiches. Anything with melted cheese is a winner in my book! :)

    I love sandwiches! Memorial day weekend, we went to the beach and I ate an old school fluffy white bread with sliced turkey, a kraft singles, mustard, mayo, and chips sandwich. It got soggy from my wet hands and reminded me of summer as a kid. Not exactly gourmet, but nostalgic and wonderful.

    Great looking panini! A cool way to have warm, toasty food when the weather gets too hot. In another month, the tomatoes will be ripe and ready in my garden, then my favorite sandwich is the BLT, with homemade mayo. so good!

    Your sandwiches look so good! Olive oil, hah…I’ll have to try that, I’ve only used butter. Wow, that popcorn looks great! I’ll have to try that too. I love when the back is full, but that rarely happens. The only sandwich that I always love is a wet combo. For those who don’t know what that is, they’ll have to ask your hubby or come to Chicago!
