It’s Friday. You’ve worked a full week. You’re ready to come home, put your feet-up and relax.
The last thing you want to think about is putting together ingredients for dinner.
But yet, you still want something delicious to eat that’s full of flavor and is different from your regular weeknight routine.
I get it.
Or maybe you’re getting excited for your friends to come over tomorrow and are trying to figure out what to eat as an appetizer. You want something light that won’t spoil your appetite for dinner but will keep your stomach from growling as you sip on your drinks and wait for all the guests to arrive.
Of course, you also want something can be made in under 20 minutes and is unique, but not too strange that they won’t recognize the ingredients.
I (sort of) get that too.
Whether you’re searching a a light meal, a fun appetizer to serve to guests or just another way to use asparagus while it’s in season, this needs to be in your next meal plan! It’s incredibly easy to put together, goes perfectly with a glass of wine and brings out the best of this season’s flavors.
Asparagus and Ricotta Naan

I served this with whole wheat naan from Trader Joe’s; I found the thickness and texture of the naan to be the perfect base, but it would also go well with pizza dough and/or a french baguette.
Ingredients
- 2 tbs. olive oil
- 1/2 bunch asparagus, trimmed
- 1 tsp. lemon juice
- Salt and pepper
- Pinch of red pepper flakes
- 3 pieces whole wheat naan (or pizza dough or french baguette)
- Garlic powder
- 1/4 cup ricotta
- 1/4 cup shaved parmesan cheese
Instructions
Preheat oven to 350. Heat olive oil in large skillet over medium-high heat. Add asparagus and partially cover. Cook about 10 minutes, until asparagus is tender. Season with lemon juice, salt, pepper and red pepper flakes. Set aside.
Place naan on baking sheet. Sprinkle each piece with garlic powder. Top evenly with ricotta and parmesan cheese, then top with asparagus.
Bake for about 7-8 minutes (or more if using pizza dough/bread), until heated through and golden brown. Serve and enjoy!
