Tofu and Vegetable Stir-Fry

I know, I know. It’s St. Patty’s Day.  You’re focused on shamrocks, parades and wearing that one green sweater you’ve kept for years, for this exact occasion.

So how could I possibly post something that doesn’t involve any of the above?

Because I’m looking out for your best interest.  I also know that you just may be more concerned today about drinking a good beer (or two, or…) and then trying out your best Irish accent with anyone in close proximity that will listen.

To be honest, as you read this, I hope I’m out clinking glasses with my Irishman husband.  BUT!  I also know that your search to find a 4-leaf clover will be a lot more successful if fueled by the right food.

So be sure to ingest some greens today as you get ready to appreciate the local pub :)

Tofu and Vegetable Stir-Fry

Ingredients

  • 1 cup brown rice
  • 2 tbs. sesame oil
  • 1/4 cup low-sodium soy sauce
  • 1 tbs. brown sugar
  • Pinch of red pepper flakes
  • 2 garlic cloves, minced
  • Ging, to taste
  • 8 oz. extra-firm tofu, cubed and pressed
  • 1 red pepper, sliced
  • 1/2 head of broccoli, speared
  • 1/3 cup corn (frozen or fresh)
  • Several handfuls baby spinach

Instructions

1. Cook rice according to package directions. Meanwhile, whisk together sesame oil, soy sauce, brown sugar, red pepper, garlic and ginger in small bowl. Heat soy sauce mixture in large skillet over medium-high heat. Add tofu, pepper and broccoli and saute about 5 minutes, until tofu is browned, stirring frequently. Add in corn and cook until warmed through.

2. Remove from heat and mix in spinach. Serve with cooked rice and enjoy!

    Such a pretty and vibrant dish-I’d love to try this recipe! Most of this rainy day will be spent at home catching up on bills and laundry, with some time relaxing in front of the fire :-) . Unfortunately I’m not super excited about tonight-attending a “Labor Relations Awards Dinner” with my hubby for one of his work functions. Enjoy a green beer, or two, for me :-)

    Your dish is absolutely vibrant…I’ve never called food that before, but this deserves it! I’ve never tried tofu; I’m scared. At first glance, I thought they were perfect cubes of grilled chicken. I’m so proud of you for cooking such healthy meals for the one you love and spreading the inspiration !

    A good stir fry is always a great dinner! Theres green in there too- so that sort of makes it an appropriate st pattys day recipe. No real plans here bc kay isnt feeling too hot

    Our St. Patrick’s Day has been very food-focused, actually – I made soda bread, and my husband made his Guinness beef stew (although he prefers to use Murphys instead, but we had trouble finding it today…). We’ll probably be either drinking some of his homemade porter later tonight, or hitting the whiskey.

    Tomorrow’s the parade, and if we didn’t have to go to an open house and meet with 2 contractors, I’d be celebrating it the way we always do when we actually WENT to it: drinking beer out of a travel mug while out in public. Don’t tell me you thought everyone’s Dunks cups in Southie at the parade actually had coffee in them?
