Remember how I told you about how my husband proposed making marshmallows from scratch? Yeah, that was a fun.
Well the recipe made a lot of marshmallows.
And while we drank our hot chocolate we dunked marshmallow after marshmallow into our steaming cups.
It was a glorious thing.
And then we woke-up the next morning and somehow there were still a lot of marshmallows left. And I realized they probably don’t stay good as long as the ones that come in perfect little sizes in perfect little bags.
And I wanted the sweet taste of hot chocolate again. But I’m a food blogger and cannot repeat a recipe.
And I realized I am starting too many sentences with the And. When I shouldn’t ever start a sentence with that word. Sorry about that.
Sooo I couldn’t let my precious new creation go to waste. I turned to my new favorite information source.
Within seconds I had a recipe for Hot Chocolate Cookies and was baking away.
Within minutes we were biting into warm chocolate cookies with gooey marshmallows.
I can review cookbooks for a hobby. Find recipes online in seconds. And eat warm cookies with my husband. Life is good.
Hot Chocolate Cookies

Ingredients
- 8 tbs. (1 stick) butter
- 1/2 cup sugar
- 1/3 cup brown sugar
- 1 egg
- 1 tsp. vanilla
- 1 3/4 cup all-purpose flour
- 1/6 cup cocoa powder
- 1/2 tsp. salt
- 3/4 tsp. baking soda
- 1 cup marshmallows (regular or mini sized)
Instructions
Preheat oven to 350 degrees. Cream together butter and sugars until smooth and fluffy. Add eggs and vanilla and beat together. Slowly add in flour, cocoa powder, salt and baking soda. Mix until well-blended.
Spray baking sheet with cooking spray or line with parchment paper. Scoop batter onto baking sheet (I use an ice cream scooper). Bake for 8-10 minutes, until slightly firm.
Remove from oven and immediately top with marshmallows. Let cool. Serve and enjoy!
