Hot Chocolate Cookies

by simplylife on February 22, 2012

Remember how I told you about how my husband proposed making marshmallows from scratch?  Yeah, that was a fun.

Well the recipe made a lot of marshmallows.

And while we drank our hot chocolate we dunked marshmallow after marshmallow into our steaming cups.

It was a glorious thing.

And then we woke-up the next morning and somehow there were still a lot of marshmallows left.  And I realized they probably don’t stay good as long as the ones that come in perfect little sizes in perfect little bags.

And I wanted the sweet taste of hot chocolate again.  But I’m a food blogger and cannot repeat a recipe.

And I realized I am starting too many sentences with the And.  When I shouldn’t ever start a sentence with that word.  Sorry about that.

Sooo I couldn’t let my precious new creation go to waste.  I turned to my new favorite information source.

Pinterest.

Within seconds I had a recipe for Hot Chocolate Cookies and was baking away.

Within minutes we were biting into warm chocolate cookies with gooey marshmallows.

I can review cookbooks for a hobby.  Find recipes online in seconds.  And eat warm cookies with my husband.  Life is good.

Adapted from Dine and Dish

Keywords: bake dessert chocolate cookie

Ingredients

  • 8 tbs. (1 stick) butter
  • 1/2 cup sugar
  • 1/3 cup brown sugar
  • 1 egg
  • 1 tsp. vanilla
  • 1 3/4 cup all-purpose flour
  • 1/6 cup cocoa powder
  • 1/2 tsp. salt
  • 3/4 tsp. baking soda
  • 1 cup marshmallows (regular or mini sized)

Instructions

Preheat oven to 350 degrees. Cream together butter and sugars until smooth and fluffy. Add eggs and vanilla and beat together. Slowly add in flour, cocoa powder, salt and baking soda. Mix until well-blended.

Spray baking sheet with cooking spray or line with parchment paper. Scoop batter onto baking sheet (I use an ice cream scooper). Bake for 8-10 minutes, until slightly firm.

Remove from oven and immediately top with marshmallows. Let cool. Serve and enjoy!

Brilliant. Who needs liquid when you can have a cookie?!

I love cookies with lots of stuff in them: chocolate chips, M&Ms, pretzels (yes, pretzels!) The more stuff, the better!

These cookies look so so divine…
    Hot chocolate and marshmallows…. Yumm….
B/W You know I too just notice that I start way too many sentences with AND… LOL

I have a recipe for something similar to this because I was intrigued by them… And who doesn’t love marshmallow? (or the fluff- oh the fluff!)

Cookies are my favorite dessert (of all time), so I’m not picky- I just prefer that they are soft and chewy, not crispy…

These look infinitely superior to the Girl Scout cookies I just picked up from my niece. They’ll have to wait…well…let’s not think about how quickly we’re going to go through those cookies. But I am definitely making these. I think even D will like them. (And I’m totally with you on Pinterest…it’s awesome)

My favourite kind of cookie is a chocolate chip cookie … has to be homemade. I made hot cocoa cookies once and they were fabulous! My students looooooved them!

Who knew there could be something better than hot chocolate with marshmallows?! You’ve done a good job of finding it! Also, I too start sentences with And far more than my childhood English teachers would like. But I’m sure it’s sometimes worth it :)
