Feeling Under the Weather? Chickpea and Vegetable Soup

I went to bed, giving out a small cough here and there.  ”Oh it’s just a tickle in my throat,” I said to hubby as his eyes widened a bit.

I woke-up and that tickle became a sore, scratchy feeling.

I still went to work (because yes, I’m that stubborn coworker who will only take a sick day when I’m throwing-up).  I made sure to drink lots of fluids, rest and keep my distance from others.

I also made sure to continue eating foods filled with nutrients that would make my body stronger.  The chickpeas provide a great source of protein while the veggies give your body the extra nutrients it craves.  The warm broth will soothe your scratchy throat and relax your tense muscles.

This soup is great because it’s extremely versatile.  Use whatever veggies you have remaining in your fridge and freezer and add any shape pasta (if you even want to).  Just make sure to get back under the covers after you’ve eaten it!

Chickpea and Vegetable Soup

Ingredients

  • 2 tbs. olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1/2 cup chopped carrots
  • 1/2 head of broccoli florets
  • 1 can chickpeas, rinsed and drained
  • 2 tbs. tomato paste
  • 3 cups low-sodium chicken or vegetable broth
  • 1 cup water
  • 1 cup orzo (or other small pasta)
  • 1/3 cup frozen peas
  • 1/3 cup frozen corn
  • Salt and pepper, to taste
  • Parsley, to taste
  • Oregano, to taste

Instructions

1. Heat oil over medium-high heat in large pot. Add onion and cook 4-5 minutes. Add garlic, carrots and broccoli and cook until tender, about 3-4 minutes. Stir in chickpeas, tomotoe paste broth and water; bring to a boil.

2. Add in orzos (or other desired small pasta) and cook al dente. Mix in peas and corn and cook until warmed, about 1 minute. Season with salt, pepper, parsley and oregano. Serve and enjoy!

    Oh no, being sick is the worst! I especially hate that night-before-you-get-sick feeling when you can tell it’s creeping on. No good.

    This sounds delicious, but I’ll be honest I have Nick BUY me soup when I’m under the weather! Usually I have no energy, so cooking just isn’t in the cards. Good for you though! This looks amazing.
    Two other things I do when I’m sick; buy Gatorade and popsicles! The gatorade is the G2, unless I’m throwing up and need the sure and extra electrolytes.

    My go-to foods when sick are soup, English muffins (I have no idea why? Because they’re bland?), and oatmeal. Oh, and tea. Buckets and buckets of tea!

    When I am feeling under the weather I eat a lot of oatmeal and soup. Things that are easy on the stomach, toast is always good too! And I drink water like its my job, and those emergen-c drinks

    I think this soup would do the trick if you are feeling sick.
    I hope you get to feeling better.
    This is silly but when I was younger my mom would always make this pasta (called pasta..its teeny tiny) and she would put a bit of butter and parm. It was so delicious and always made me feel so good. :)

    I think this cold is sweeping the area – I’m just getting over it now and one of my colleagues had it with me (we’ve been so busy neither of us could take a day off). I’m sorry, it’s a misery, so I hope you get through it soon!

    My cure is hot toddies. Think about it. The lemon gives you vitamin C, the cloves clear up your sinuses, the honey coats your throat, the whiskey warms you, and the hot water produces steam to help you breathe. Perfect!
