But listen to me, please. I told you that you needed to make this back in April. Well, I couldn’t stop thinking about it and you know it has to be good if I’ll repeat it, so this recipe is back along with my plea to just give this a try.
While the dough rises you can cross things off your to-do list, your picky eaters will be so enamored by the warm, doughy pretzel rolls, hint of Worcestershire sauce and melted cheese that they won’t even know they’re eating beans, and the dishes…well, if you have a dishwasher in your kitchen then I don’t want to hear a single complaint. My husband requests these time and time again, and his hands are what clean the many bowls I somehow require for each step of the way and the onion pieces that seem to end up everywhere we turn.
Pretzel Rolls
Inspired by Food Network
This recipe is originally for 4 rolls but I find that 6 works perfectly.
Ingredients:
1 tbs. active dry yeast
1 3/4 cup all-purpsose flour
1 cup whole wheat pastry flour
1 tbs. sugar
1 tsp. kosher salt, plus more for sprinkling
Cooking spray
1/3 cup baking soda
Directions:
1. Pour 1 cup warm water in bowl of stand mixer and sprinkle the yeast on top. Set aside for 5 minutes. Meanwhile, mix together the flours, sugar and salt in a large bowl. Add the flour mixture with the yeast and mix with dough hook on low for about 1-2 minutes. Once dough comes together, increase speed to medium and continue until dough is elastic and smooth, about 8 minutes.
2. Shape the dough into a ball and place in bowl lightly coated with oil. Turn dough to cover evenly. Cover bowl with a cloth and let sit in warm place for about 1 hour, or until it has doubled in size.
3. Punch dough the dough and knead for about 1 minute. Dived dough into 4-6 pieces, depending on preferred size. Place rolls on baking sheet lined with silicone baking mat or cooking spray. Cut 2 diagonal slices in the top of each roll. Cover with a close and let rise in a warm place until doubled in size, about 30 minutes.
4. Preheat oven to 425 degrees. Bring 8 cups of water to a boil in a large pot. Stir in the baking soda. Add 2 rolls at a time. Let cook on each side for 2 minutes then remove with a slotted spoon and place on baking sheet, with the slits on the top. Sprinkle with salt. Cook remaining rolls. Bake all rolls until golden, about 12-15 minutes. Let cook slightly before slicing. Serve and enjoy!
Black Bean Burgers
Adapted from Whole Foods
Ingredients:
1 15 oz. can black beans, rinsed and drained
1 egg
1/2 onion, chopped
1 cup whole wheat bread crumbs (I made these by placing 1-2 slices of day-old whole wheat bread in the food processor)
1 large button mushroom, chopped into small pieces
Oregano, to taste
Basil, to taste
Garlic powder, to taste
Salt and pepper, to taste
Worcestershire sauce (this was actually a bottle I received from the Foodbuzz Tastemaker Program several months ago!)
1-2 tbs. olive oil
Additional preferred toppings (we used cheddar cheese, spinach, ketchup and mustard)
Directions:
1. Mash beans in a bowl using a fork. Add egg, onion, bread crumbs, mushroom, seasonings and worcestershire sauce and mix together. Shape into 6 patties.
2. Heat oil in large skillet over medium heat. Place 2-3 patties on skillet and cook about 5 minutes per side, or until golden brown. Place cheese in warm patty when there is about 1 minute remaining. Transfer to rolls and add additional toppings. Serve and enjoy!
