Reader’s Challenge #6 & Enjoy Life!!!

Among things like “weekend getaways” and “walks in the sunshine,” chocolate and granola definitely make the list of what helps me to enjoy life! :)  So when I was offered the chance to review Enjoy Life’s new Double Chocolate Crunch Granola and their Semi-Sweet Chocolate Mega Chunks, I definitely said yes!



I, of course, decided to rip open the bag of granola and try that first!  This granola is definitely for the chocolate lover and I appreciate that the bag doesn’t say “chocolate” and then mislead you to a few chips sprinkled throughout!  I loved the sweetness and crunch this added to my breakfast mixes and think it would be amazing as a topping to frozen yogurt!

Now to change gears, it’s on to my next challenge in the kitchen!…

This time, the question is for selfish reasons as our schedules have changed and there are a few upcoming nights where I’ll be on my own for dinner.  It’s amazing to me how ceaselessly motivated I am to cook and plan meals when it’s my husband and I having dinner together (most nights).  It doesn’t hurt that I have someone who’s willing to try pretty much anything, will clean even the biggest cooking disasters and always says “thank you” after I’ve made something.  With that said, when it comes to meals on my own I always seem to draw a blank and after wandering around the kitchen for a few minutes, I usually end up with a bowl of cereal.

So please help me to continue thinking outside the box by sending me your favorite “meal for one” (I like leftovers, so it’s okay if it makes more than one serving :) by May 31!  It could be your own recipe, a blog or another recipe source!

    Lovvvve baking with chocolate chunks- wayy better than chips. I like stuffed potatoes!! Easy and delicious

    I usually make pasta or Israeli couscous and load it up with veggies when I'm just cooking for myself. My fiance doesn't like a lot of different veggies and usually wants some kind of meat with his dinner so it's a chance for me to make exactly what I'm craving when he's not around for dinner.

    I love chocolate too, and like the idea of using this on top of frozen yogurt. A great combination, definitely!

    This sounds like my kitchen! I only cook when it is my boyfriend and I (and he cleans all the dishes. YAY!). When we are on our own it's usually easy meals. I like to call them my single gal meals! I usually go for eggs, pasta full of veggies, or a big hearty salad!

    awwwww i know what u mean – my meals are usually very simple – a salad or a steamed squash or a bowl of oatmeal since i'm cookin only for myself usually! hmmm maybe try making a dish from Spain since you lived there for a bit? :D

    I need to look at that granola – I'm allergic to nuts and have a hard time finding nut-free granola.

    I like making personal pizzas for myself. You can freeze the dough or make a few for the week.

    I absolutely LOVE Enjoy Life's chocolate chips. They're mini…gluten, dairy, soy, nut free, and delicious! I'm excited to try some of these other products.

    I cook for one pretty much all the time! My favorite (super easy) dinner for one though is Truffle Eggs over Brioche. I'm not going to lie, I totally stole the idea from Amanda Hesser (love her). Scramble some perfect eggs (maybe seasoned with a sprinkle of parmesan), lay them over lightly toasted slices of brioche (or challah) and drizzle with just the slightest bit of truffle oil. Served with a simple green salad and a crisp white wine, it's pretty much the ideal dinner alone. In fact, I think I just made my dinner!

    I would indulge in this chocolate in any way that I could, that's for sure! I better stay away! My favorite one-meals are sandwiches, salads, pastas, and my all-time preference, go by grandma!!!
