My husband is in law school. Today he has his first final of the semester (wish him luck – he reads your comments too!). This means time is very very precious. Thankfully I have a husband who puts his wife, and his wife’s priorities first. That means that the time of day I get to spend time with him without textbooks and highlighters is over dinner.
He patiently waits while I take photos of food and then listens as I ramble on and on about every detail of my day. And then we get up from the table and he does the dishes while I stand over him, just to be with him for a little longer, until he retreats back to his study cave.
Can I tell you a secret though? Although I want him to learn all about different cases and writing memos, I’ve learned how to get just a few more minutes out of this precious time of day. When I make something extra good, where he just has to go back for seconds and even maybe thirds, that usually means that a few extra minutes will pass by unnoticed before the reminder that a final exam is looming.
So when you’re looking to really grab someone’s attention, wow them with a meal and spend just a little longer lingering over dinner then you need to make this.
You can really just use your favorite homemade pizza recipe here and place the dough in a pie pan rather than on a pizza stone but I highly suggest this recipe. Preparing this in layers (as shown in the photos) adds such an rich dimension to every single bite and you’ll be thanking yourself for this extra touch.
Deep Dish Mushroom and Olive Pizza
Adapted from Real Simple
Ingredients:
4 tbs. olive oil
1 small onion, sliced
1 14.5 oz can diced tomatoes, drained (I loved using this rather than a traditional pizza sauce, but my husband who doesn’t love tomatoes as much would prefer the other way)
1/4 cup kalamata olives, roughly chopped
1/4 cup black olives, roughly chopped
4 button mushrooms, sliced
1 cup mozzarella cheese, shredded
Oregano, to taste
Oregano, to taste
Basil, to taste
Directions:
1. Preheat oven to 400 degrees. Spray a 9-inch pie pan with cooking spray. Press the dough into the pan, covering the bottom and sides.
2. Heat 2 tbs. olive oil in a large skillet. Cook onions for about 8-10 minutes, until browned and caramelized. Place in bowl and mix with olives, mushrooms and remaining oil. Set aside.
3. Pour the diced tomatoes onto the dough. Then top with caramelized onions mixture. Top with mozzarella cheese and sprinkle with seasonings. Bake for about 30-35 minutes, until crust is golden brown. Serve and enjoy!
