Before and After: Pasta with Artichokes & Sun Dried Tomatoes

Before training for my first marathon I thought crossing the finish-line was just a dream.  After putting in months of long-runs, 2 pairs of shoes and waking up earlier than I ever want to numerous Saturday mornings I started the miss the feeling that comes after ending a long run and knowing what you’ve just accomplished.

Before I got married, I bought a 4-pack of toilet paper every week during my trip to the grocery store.  After marriage, I adopted my husband’s shopping tactic of buying the largest package to save money and avoid extra trips to the store; at first, I first felt like I needed to find the 3 kids we were buying this package for but quickly adapted to his reasoning.

Before I had been blogging for over a month I posted this recipe and thought a steaming pan of noodles looked appetizing.  After taking hundreds and hundreds of pictures and reading countless blogs, I’ve learned that a picture can make you crave a food more than the ingredient list.  However, I will say although (I think) the pictures have improved since that first month, I still see plenty of room for improvement but my hunger won’t let me take more than 2 minutes to snap the pictures before I dig in.

Pasta with Artichokes and Sun Dried Tomatoes
(Adapted from Whole Foods)

Olive oil of cooking spray
1 onion, diced
1 can artichoke hearts, drained and sliced
2 garlic cloves, chopped
1 tsp lemon juice
Salt and pepper
1/4 cup dry white wine
sun-dried tomatoes, sliced
2 tsp thyme
Grated parmesan cheese
Whole wheat pasta

1. Heat oil or cooking spray in large skillet over medium heat. Add onions and cook until tender, about 3-5 minutes. Add artichokes, garlic, lemon juice, salt and pepper and cook 7-8 minutes. Add wine and simmer until just thickened.

2. Meanwhile, cook pasta according to package directions. Before draining reserve 1/4 cup of water that pasta has cooked in.

3. Stir in 1/4 cup reserved pasta water into skillet; add tomatoes, thyme and salt and pepper to taste. Add in pasta, top with parmesan cheese and enjoy!

    I love this "before and after" writing! Your dish looks amazing and I'm with you, if I had something I loved to eat a couple feet away, my pictures would definitely be blurry and totally out of focus as a raced to get the snap shot! As you know, I'm married for over 31 years and am embarassed to say I never realized this common sense habit about paper products! Thanks!
