Reader’s Challenge #4 & Sweet Potato Burritos!

It’s that time again!…I’m ready for your next challenge!  This time the challenge is: baking!!! I know we all love something warm and fresh that comes straight from the oven and I’m excited to be pushed outside my baking comfort zone.  So you tell me what you’d like to see: is there a particular type of dessert you’d like me to attempt like cupcakes or truffles?  Or maybe there’s a specific ingredient you’d like to me bake something with like coffee or lemon zest?  The options are endless and I can’t wait to see what you think of!

Black Bean & Sweet Potato Burritos



One another note: Looking for a healthy new burrito idea?  I came up with this as I was scouring the kitchen to find a meal using ingredients that we already had.  I sauteed sweet potatoes with onions, garlic, paprika, oregano, chili powder and cayenne pepper.  Then I added black beans, spinach, Mexican cheese and salsa.  It was a big mix of big flavors and was a perfect meal!

    Ever since I had a sweet potato burrito at Dos Amigos Burritos in Portsmouth NH (amazing burritos by the way!) I've been combining black beans with sweet potatoes – sooooo delicious and easy!!

    I think you should bake something that is primarily comprised of chocolate, chocolate, caramel, chocolate, butter, chocolate, chocolate, sugar, chocolate, and chocolate.
