Whole Wheat Banana Chocolate Bread!

Last week I had had a snow day.  I can’t remember ever having one in my adult life.  It was the best. day. ever.

We were literally snowed in our apartment.  Meaning I was basically forced to stay in my pajamas and do absolutely nothing.  All day.  I can’t tell you the last time I’ve stayed inside for an entire day.  Normally around noon I start to feel guilty and way too unproductive.  But when it’s a snow day, it’s like your work is telling you to stay at home and you realize everyone is inside too and there’s no where to go because everything is closed.  I love the snow.  Well okay, I may have just been talking about how I wish I never had to see the snow again, but I love it if it will bring a snow day.


So what to do with a day in pajamas and no way to get to the store?  Figure out what sweet thing I can make using ingredients we already have!  When I realized that we had ripe bananas just waiting to be used and the remains of a bag of chocolate chips, I knew just what to make!…


Whole Wheat Banana Chocolate Bread
Adapted from Eat Better America

Ingredients:
1 2/3 cups whole wheat flour
2/3 cup sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/4 tsp. salt
1 cup mashed ripe bananas (2 to 3 bananas)
2 eggs
1/4 cup oil
1/4 cup skim milk
1 tsp. vanilla
1/3-1/2 cup chocolate chips

Directions:
1.  Heat oven to 350 degrees.  Spray bottom of bread pan with cooking spray.  Mix together flour, sugar, baking powder, baking soda, cinnamon and salt.

2.  In a separate bowl, beat bananas, eggs, oil, milk and vanilla until smooth.  Combine with flour mixture and fold in chocolate chips.

3.  Bake 70-80 minutes until toothpick inserted in center of loaf comes out clean.  Allow loaf to cool, serve and enjoy!

    I don't know anything about a snow day, but I do know this bread sounds really yummy. I am a sucker for banana-chocolate chip combo and love that it is made with whole wheat.

    chocolate chip banana bread is amazing! I actually get excited when I know I have enough bananas going bad to make some. Yours looks like it turned out perfect. I definitely dislike snow, but a nice relaxing day at home is perfect every once in a while!!

    It definitely depends on the day but when it is too snowy to do anything just staying inside is one of my favorite things to do. When it is sunny I always start to feel super lazy and guilty and I hate that.

    I recently made banana breakfast muffins and I wish I would have added chocolate to a few of them to have as dessert! This bread looks so goooood.

    Normally I feel guilty if I don't get outside and do something, but there are a few occasions where it is okay ie snow day, sick day, lazy day, baking day :) And if you're baked this bread then I think it was a pretty successful day!

    Ummm, I used to love staying in all day. Until I had a baby. Now it's just hard to get out of the house. I'm not staying in by choice. Ya know??

    Well, we are never snowed in, but before the toddler was born (and when the teenager was old enough to occupy himself), I used to love rainy, stormy days when I wouldn't leave the house… Now, entertaining a toddler inside a small house can be quite challenging…

    I love the first couple of snow/ice days, but after that it starts to get a little old. We have a snow/ice week two weeks ago and things were starting to get stir crazy around here. I think baking and staying in your pjs is definitely a great way to spend it though! The bread looks delicious!
