Last week I had had a snow day. I can’t remember ever having one in my adult life. It was the best. day. ever.
We were literally snowed in our apartment. Meaning I was basically forced to stay in my pajamas and do absolutely nothing. All day. I can’t tell you the last time I’ve stayed inside for an entire day. Normally around noon I start to feel guilty and way too unproductive. But when it’s a snow day, it’s like your work is telling you to stay at home and you realize everyone is inside too and there’s no where to go because everything is closed. I love the snow. Well okay, I may have just been talking about how I wish I never had to see the snow again, but I love it if it will bring a snow day.
So what to do with a day in pajamas and no way to get to the store? Figure out what sweet thing I can make using ingredients we already have! When I realized that we had ripe bananas just waiting to be used and the remains of a bag of chocolate chips, I knew just what to make!…
Whole Wheat Banana Chocolate Bread
Adapted from Eat Better America
Ingredients:
1 2/3 cups whole wheat flour
2/3 cup sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/4 tsp. salt
1 cup mashed ripe bananas (2 to 3 bananas)
2 eggs
1/4 cup oil
1/4 cup skim milk
1 tsp. vanilla
1/3-1/2 cup chocolate chips
Directions:
1. Heat oven to 350 degrees. Spray bottom of bread pan with cooking spray. Mix together flour, sugar, baking powder, baking soda, cinnamon and salt.
2. In a separate bowl, beat bananas, eggs, oil, milk and vanilla until smooth. Combine with flour mixture and fold in chocolate chips.
3. Bake 70-80 minutes until toothpick inserted in center of loaf comes out clean. Allow loaf to cool, serve and enjoy!
